THE CAROB
BOTANICAL CHARACTERISSTICS

The Carob tree, Ceratonia Siliqua L., makes an unusual indeihiscent fruit that is called loment or commonly carob. The fruit is from 10 to 20 cm in length, from 2 to 4 cm in width, and from 5 to 15 mm in thickness.
It is green coloured before ripening and when it ripens the color changes to dark or ligth brown.
The carob surface is winding, smooth, and its thickness is higher in the middle and where the beans are.
The epicarp is black, brigth and coriaceous; the mesocarp (pulp) is yellow, fleshly and sacchariferous (or sweet).
